I love baking cake but I rarely do because it’s too much for us. The cake usually spoils before we can eat it all. I need to start freezing slices to eat later.
I love trying new recipes, two years ago I found a chocolate cake recipe that really is the best I’ve ever tried. I’ll never try another chocolate cake recipe, it’s that good. I usually make Italian butter cream as the frosting for this cake. It may not look like it by the picture but it is the best tasting chocolate cake you’ll ever try. I do need to work on my decorating skills.
I made this cake for my son Levi’s first birthday. It was a nice day with family. Levi was luckier than James. James got a store made cake from Vons on his first birthday. We had recently moved here from Germany and didn’t have a home just yet and nowhere to make a cake. It was so much fun watching James eat that cake! I wish I could say I don’t buy store-bought cake anymore but sometimes life gets in the way of my time for baking!
Below are the instructions to the best chocolate cake.
1 cup sugar
¾ cup plus 2 tbsp flour
¼ cup plus 2 tbsp unsweetened cocoa powder
¾ tsp baking powder
¾ tsp baking soda
½ tsp salt
1 large egg, room temperature
½ cup sour cream, room temperature
¼ cup canola oil
1 tbsp vanilla extract
½ cup boiling water
In a large bowl, mix together sugar, cocoa powder, flour, baking powder, baking soda and salt. Crack in egg, spoon in sour cream and pour in the oil and vanilla. Mix together before adding in the hot water. Quickly combine and pour into a greased 9 inch round pan.
For a thicker cake use a smaller sized pan. Bake for 18 minutes or until a toothpick inserted in cake comes out clean. Cool cake completely before frosting.
This recipe is also great with cupcakes. Cupcakes are heaven! They taste great and are way less messy to handle. However you decide to make this delicious cake, just know you won’t be disappointed.
